Winter Warmer- Indian Masala Chai Recipe

Serves 3
Ingredients:
1/2 tsp ground cinnamon or 1/2 a cinnamon stick
1/2 tsp ginger powder
4 cardamom pods
3 cloves
3 pepper corns
2 tsp loose black tea or 2 teabags
3 tsp raw sugar (unrefined)
2 cup water
1 cup milk- preferable unhomogenised organic/biodynamic milk
Instructions:
Roughly pound the cardamom, cloves and peppercorns in a mortar and pestle.
Pour water in a saucepan and bring to the boil on a medium-high heat, add the ground spices to water along with the ginger and cinnamon.
Wait a one minute and add black tea and sugar. Stir.
Wait another minute and add milk. Stir and remove from heat.
Leave to stand for 3 mins and then pour through a strainer. Serve hot.
